Spiducci BBQ: A Great Addition to Your Grilling Menu

If you love barbecuing in the summer (or any season!) you love discovering new and different ways of grilling: seeking out new recipes to delight friends and family in the backyard or even customers in your business. One great recipe you can add to your book is the classic Italian, spiducci BBQ skewers.

These succulent skewers originate from the region of Abruzzo, Italy, which is known for its sheep herding tradition. It’s also known as arrosticini or spiedini: spiducci was originally made with sheep but any chef can improve or alter the recipe. Since sheep is not that always readily available now, lamb is often used as a great substitute.

 

The skewers are prepared by cutting the meat into small cubes (about 1cm, or diced). Traditionally, they’re cooked on a special grill or charcoal barbecue that prevents the skewers from sticking or burning on the grill, just far away enough from the coals to make them easy to cook to perfection.

 

Pure lean meat is not advisable because it can get dry, whereas a little fat will make the skewers nice and juicy while grilling. Another quick tip: in using wooden skewers, soak them for about half an hour first to prevent them from burning during grilling.

 

If you want to cook your skewers perfectly the first time around, a specialized spiducci BBQ grill from Hitek Milan will make it very easy. You will know when they are ready to be turned if they are not sticking to the grill when turned.
