The 3 Things Important For Getting Your Arrosticini Right

Let’s be real, arrosticini is one cuisine that appeals to all audiences. Children or adults, formal occasion or backyard get together, arrosticini is a near certainty for being a hit with everyone. And with modern arrostincini BBQs, cooking times have come down while the taste and consistency have gone up.

Preparing arrosticini is easy, but it is getting it right that requires you to stay away from over-seasoning and the desire to overcook.

Preparing arrosticini is pretty simple: a little olive oil, some salt and, if you feel like it, some seasoning and put it on the BBQ to cook. An easy and healthy meal ready in a few minutes. Arrosticini is typically prepared with lamb or mutton (as it must (!) be, if you ask any from Abruzzo in Italy), but, frankly, any meat capable of being skewered and cooked slowly is suitable. And so it has proven: people have modified arrosticini to include any number of meats, seasoning, sauces and condiments.

But there are some precautions to take when preparing arrosticini. We list some very common mistakes made when preparing and cooking arrosticini.

  • Over-seasoning – Arrosticini’s origins are minimalist. The dish is prepared with a little olive oil and salt. However, most people tend to add a little pepper to the dish. The mistake? Adding too much of these and, worse, seasoning the arrosticini heavily. The delicacy is in the moistness and the gentle taste.

  • Overcooking – Overcooking arrosticini is a very common problem. Judged by the eye, people used to cooking their meats thoroughly will find that once the arrosticini has turned that familiar brown-ish color, it has become hard and chewy, a sure sign that it is overcooked. The slight moistness and tenderness are crucial ingredients if arrosticini, be careful not to lose that.

  • Incorrect equipment – Charcoal, moderate temperatures and a little bit of fat dripping into the fire only to smoke the arrosticini are crucial ingredients for this delicate mix. Using an electrical grill will take away the taste, as compared to even a small arrosticini BBQ setup. Also, an impatient approach to arrosticini will cause uneven cooking, and probably a dry dish.
