Easy Arrosticini Recipe

 

What Are Arrosticini?

Arrosticini are a class of traditional cuisine from the Italian region of Abruzzo. They are usually made from chunks of mutton strung on wooden skewers. The grill used it an elongated shape that looks like a gutter.

Recipe

Our favorite recipe very simple with a bit of a kick. We think the simplicity of it really brings out the smokiness and the flavor of the mutton. It’s very easy to do, and the key is getting the slightly crispy texture on the surface of the meat. With a little practice, Arrosticini will become your new summer grill staple! We like using just a tiny bit of rosemary and chili pepper, but you can use however much suits your taste.

Ingredients:

  • 400 grams of mutton
  • Extra virgin olive oil
  • Rosemary
  • Salt
  • Chili pepper 

 Steps:

  1. Wet the wooden skewers so they won’t blacken when cooking on the grill
  2. Cut the mutton into 1cm-1.5cm pieces
  3. String the meat onto the skewers, making sure you don’t put too much that it hangs off the edge of the grill
  4. Alternate pieces of lean meat and fatty meat pieces for a smoothness through the skewer
  5. Season the meat skewers with extra virgin olive oil, rosemary, and chili peppers
  6. Leave the skewers to marinate for 1 hour and then drain the liquids
  7. Light and heat up your Arrosticini BBQ
  8. Place the meat skewers on the Arrosticini BBQ and grill over a high flame for about 1 minute each side, or until the meat is browned
  9. Add a pinch of salt and serve

Tip

Arrosticini are eaten with bare hands, pulling the meat off the skewer with your teeth.
