3 Easy Arrosticini Recipes

Arrosticini has long been a delicious secret of Italy's Abruzzo region. Now, this traditional street food is beginning to garner the attention of gourmands and casual foodies alike. Also known as spiducci and spiedini, the dish is quickly becoming a favourite not only for its tastiness but also for how simple it is to prepare!

  • Three-Ingredient Lamb Skewer

Ingredients

-700 grams of lamb

-1 branch fresh rosemary

-4 tablespoons olive oil

-Salt and pepper

-Chili flakes (optional)

 

Cut lamb meat into small pieces, about 1/2” big. Thread the meat into wooden skewers around 25-30 centimeters long. Then, grill the meat over charcoal in low heat. Brush the meat with olive oil using the rosemary branch. This will add a dash of aromatics. Wait for the meat to brown and become crispy and then flip it. Sprinkle salt and pepper to taste once cooked. You can also add some chili flakes to give it more flavor.

 

  • Marinated Arrosticini

While it's traditional to add salt and pepper at the end of the cooking process, you can deviate from the process and marinate the meat. Combine a few tablespoons of olive oil, a dash of lemon juice and some rosemary sprigs with the lamb and seal the mixture in a Ziploc bag. Let it stand in the refrigerator for thirty minutes to an hour. Thread the meat through skewers and grill.

 

  • Chicken Spiedini

Chicken can also be used to make arrosticini or spiedini. Since this meat is leaner and drier than lamb, a marinade of olive oil, lemon and rosemary or basil, garlic, oregano, and olive oil will help it taste even more amazing. You can serve your chicken arrosticini with a side of tzatziki.
