A Fantastic Recipe For Your Next Spiducci BBQ

Spiducci BBQ, also popularly known as arrosticini, was born in Abruzzo, Italy. These delectable meat skewers are roasted over coal with a delicious natural flavor. This fine, traditional dish will get all your senses going and impress both family and friends. Now is the time to get your grill going and cook amazing spiducci!

Recipe

Here’s what you will need to serve 4 - 6 people:

  • 1 ½ pounds or 700 grams lamb which is cut into ½ - inch cubes
  • 4 tablespoons extra virgin olive oil
  • 1 branch fresh rosemary
  • Salt and pepper, to taste

 

Cooking Time

Step 1. Crush the rosemary on a chopping board and put it in a small bowl with the olive oil and black pepper grinds. Leave it there for a while you prepare the meat.

 

Step 2. Thread the cubes of lamb, alternating lean meat with fatty parts, onto the skewers and make about 16 pieces. Lightly coat each skewer with olive oil and set aside to work on the charcoal grill.

 

Step 3. Light the charcoal and leave for few minutes after catching fire to let them warm evenly by spreading the coals out.

 

Step 4. Suspend the skewers across the grill and cook for about a minute on each side, or until the meat turns brown but not burnt. The fatty meat will add a smoky aroma and delicious flavor to your spiducci BBQ. With a Milan grill, skewers and just about any other cut can easily be made to perfection.

 

Step 5. When the meat is about to cook, grind some coarse salt over the top for more flavor. Using the rosemary branch, brush the arrosticini skewers with the remaining olive oil.
